The Iblean Focaccia, also called “Drive away” it is a rustic and tasty dish widespread in Ragusa and the cities of its province, including mainly the city of Modica. Like any traditional recipe, every family has its own version: we offer you our recipes, with a classic onion-based filling, tomato puree and Ragusano DOP cheese; Tomato and aubergine puree; flavored with cow's milk ricotta and broad beans; Cow's milk ricotta and spinach…and many other flavors. In a mini version weighing approximately 40g, to be prepared in the oven at 200°C directly from frozen.
